How to Make Mushroom Broccoli Omelet

  1. Whisk together 4 large eggs, 2 large egg whites, 2 tablespoons half-and-half, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a bowl.
  2. Add a pinch of freshly grated nutmeg to the egg mixture.
  3. Set aside.
  4. Heat 1 tablespoon olive oil in a 10-inch nonstick skillet over medium-high heat.
  5. Add 8 ounces sliced mushrooms to the pan.
