Ingredients for Nachos Casserole

  • 1 lb ground beef
  • Taco Seasoning
  • 1 (15 ounce) can refried beans
  • Cheese
  • Green Onion
  • Tortilla chips, for serving
  • Water (as directed on taco seasoning packets)

How to Make Nachos Casserole

  1. Preheat oven to 350°F (175°C).
  2. Brown 1 lb ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  3. Add 2 packets of taco seasoning to the browned beef.
  4. Fill each taco seasoning packet with water (as directed on the packet) and add to the beef mixture.
  5. Stir well to combine.
  6. Simmer the meat mixture for 15 minutes, covered, or until the water has evaporated and the mixture is no longer soupy.
  7. Spread 1 (15 ounce) can of refried beans evenly over the bottom of a 9x13 inch casserole dish.
  8. Sprinkle 1 cup of shredded cheddar cheese over the refried beans.
  9. Pour the meat mixture over the cheese and beans, spreading evenly.
  10. Cover with the remaining 1 cup of shredded cheddar cheese and top with 1/4 cup chopped green onions.
  11. Bake for 15-20 minutes, or until the cheese is melted, bubbly, and golden brown.
  12. Serve immediately with tortilla chips and your favorite toppings (sour cream, guacamole, jalapeños, etc.).

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
