How to Make Potato Pancake

  1. Peel and grate 2 large potatoes.
  2. In a medium mixing bowl, combine the grated potatoes, 1/2 cup all-purpose flour, 1 large egg, 1/4 cup finely chopped onion, 1 tablespoon melted butter, salt and pepper to taste.
  3. Mix thoroughly until just combined. Add 1-2 tablespoons of milk if the batter is too thick, or a tablespoon of flour if it's too thin.
  4. Heat 2 tablespoons of vegetable oil in a large non-stick frying pan over medium-high heat.
  5. Drop 1/4 cup of potato mixture onto the hot pan for each pancake. Gently flatten each pancake with a spatula.
  6. Cook for approximately 5 minutes per side, or until golden brown and crispy. Flip carefully using a spatula.
  7. Remove from pan and place on a paper towel-lined plate to drain excess oil.
  8. Serve immediately and enjoy! Top with your favorite sour cream, applesauce, or chives.
