How to Make Prawns With Lemon Peri Peri Garlic Feta
- Clean 500g raw prawns and make a slit down the back of each prawn from the bottom of the head to the beginning of the tail.
- Remove the dark vein from each prawn. Rinse under running water and drain well.
- Melt 80g butter in a large cast iron casserole dish over medium heat.
- Arrange a single layer of prawns in the dish. Season generously with salt and freshly ground black pepper.
- Scatter approximately 1/3 of 4 cloves minced garlic and 2 tablespoons chopped fresh parsley over the prawns. Sprinkle with 1/2 teaspoon peri-peri/chilli powder.
- Dot half of the remaining melted butter over the first layer of prawns. Arrange a second layer of prawns on top.
- Repeat step 5 with another 1/3 of the garlic, parsley, and peri-peri/chilli powder.
- Repeat steps 6 and 7 for a third layer, using the remaining ingredients.
- Cover the casserole dish and cook over medium-high heat for approximately 10 minutes, or until the prawns turn pink and opaque.
- Add the juice of 1 lemon and crumble 100g feta cheese over the prawns.
- Gently rock the dish from side to side to distribute the sauce.
- Cover and cook for a further 10 minutes, or until the feta is melted and creamy, shaking the pan occasionally to combine the juices.
- Serve immediately with crusty bread or a side salad to soak up the delicious sauce.
