How to Make Prawns With Lemon Peri Peri Garlic Feta

  1. Clean 500g raw prawns and make a slit down the back of each prawn from the bottom of the head to the beginning of the tail.
  2. Remove the dark vein from each prawn. Rinse under running water and drain well.
  3. Melt 80g butter in a large cast iron casserole dish over medium heat.
  4. Arrange a single layer of prawns in the dish. Season generously with salt and freshly ground black pepper.
  5. Scatter approximately 1/3 of 4 cloves minced garlic and 2 tablespoons chopped fresh parsley over the prawns. Sprinkle with 1/2 teaspoon peri-peri/chilli powder.
  6. Dot half of the remaining melted butter over the first layer of prawns. Arrange a second layer of prawns on top.
  7. Repeat step 5 with another 1/3 of the garlic, parsley, and peri-peri/chilli powder.
  8. Repeat steps 6 and 7 for a third layer, using the remaining ingredients.
  9. Cover the casserole dish and cook over medium-high heat for approximately 10 minutes, or until the prawns turn pink and opaque.
  10. Add the juice of 1 lemon and crumble 100g feta cheese over the prawns.
  11. Gently rock the dish from side to side to distribute the sauce.
  12. Cover and cook for a further 10 minutes, or until the feta is melted and creamy, shaking the pan occasionally to combine the juices.
  13. Serve immediately with crusty bread or a side salad to soak up the delicious sauce.
