How to Make Ranch Style Beans

  1. Rinse 1 pound of dried pinto beans thoroughly under cold water.
  2. In a large pot or Dutch oven, sauté 1 medium chopped onion and 2 minced garlic cloves in 1 tablespoon of olive oil until softened.
  3. Add 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon black pepper, and 1/2 teaspoon dried oregano to the pot and cook for 1 minute, stirring constantly.
  4. Add the rinsed beans, 8 cups of water, 1 teaspoon salt, 1/2 teaspoon sugar and 1 bay leaf to the pot.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 5-6 hours, or until beans are tender. Add more water if necessary to keep beans covered.
  6. For crock-pot cooking: Follow steps 1-4. Cook on low for 8-10 hours, or until beans are tender.
  7. During the last hour of cooking, stir in 1 cup of tomato puree and 1 teaspoon of brown sugar.
  8. Remove the bay leaf. Taste and adjust salt and sugar to your liking.
  9. Serve warm and enjoy!
