How to Make Beach Corn Bread
- Preheat oven to 375°F (190°C).
- Add 1/2 cup of vegetable oil to a 10-inch square baking pan and place in the preheated oven for 5-7 minutes, or until the oil is hot.
- In a large bowl, whisk together all dry ingredients: 2 cups cornmeal, 1 cup all-purpose flour, 1/2 cup granulated sugar, 1 tablespoon baking powder, 1 teaspoon baking soda, 1 teaspoon salt.
- In a separate bowl, whisk together wet ingredients: 2 large eggs, 1 cup buttermilk, 1/4 cup melted unsalted butter, and 1 teaspoon vanilla extract.
