Ingredients for Beach Corn Bread

  • Plain Cornmeal
  • Sour Cream
  • Cream Style Corn
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon salt
  • 1 tablespoon baking powder

How to Make Beach Corn Bread

  1. Preheat oven to 375°F (190°C).
  2. Add 1/2 cup of vegetable oil to a 10-inch square baking pan and place in the preheated oven for 5-7 minutes, or until the oil is hot.
  3. In a large bowl, whisk together all dry ingredients: 2 cups cornmeal, 1 cup all-purpose flour, 1/2 cup granulated sugar, 1 tablespoon baking powder, 1 teaspoon baking soda, 1 teaspoon salt.
  4. In a separate bowl, whisk together wet ingredients: 2 large eggs, 1 cup buttermilk, 1/4 cup melted unsalted butter, and 1 teaspoon vanilla extract.
  5. Remove the hot oil from the oven (CAREFULLY!) and pour it into the bowl with the dry ingredients.
  6. Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.
  7. Pour the batter into the prepared hot baking pan.
  8. Bake for 30-40 minutes, or until a wooden skewer inserted into the center comes out clean and the edges are golden brown.
  9. Let cool slightly before cutting and serving. Enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
