How to Make Rhubarb And Strawberry Trifle

  1. In a medium saucepan, heat milk over medium heat until small bubbles form around the edges. Do not boil.
  2. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth and pale yellow.
  3. Gradually whisk about 1/3 of the hot milk into the egg yolk mixture to temper the eggs. This prevents scrambling.
  4. Slowly pour the tempered egg mixture into the saucepan with the remaining milk. Cook over medium heat, stirring constantly with a whisk, for 3-5 minutes, or until the custard thickens and coats the back of a spoon.
  5. Reduce heat to low and simmer for 1 minute, stirring constantly.
  6. Remove from heat and stir in vanilla extract. Pour custard into a bowl, cover with plastic wrap pressed directly onto the surface to prevent a skin from forming, and cool completely.
  7. Once cooled, whip the heavy cream until soft peaks form. Gently whisk one-quarter of the whipped cream into the custard to lighten it.
  8. Gently fold in the remaining whipped cream until just combined. Be careful not to overmix.
  9. Spread half of the cubed cake in the bottom of a 12-14 cup glass serving bowl.
  10. Spread half of the chopped rhubarb over the cake, followed by half of the sliced strawberries.
  11. Repeat layers: cake, rhubarb, strawberries.
  12. Spread the prepared custard evenly over the top layer.
  13. Chill the trifle for at least 1 hour, or up to 8 hours, to allow the flavors to meld and the custard to set.
  14. Before serving, garnish with toasted slivered almonds, a few whole strawberries, and additional whipped cream, if desired.
