How to Make Roasted Salmon Grape Tomatoes

  1. Preheat oven to 425°F (220°C).
  2. Line a rimmed baking sheet with non-stick foil.
  3. In a bowl, toss 1 pint grape tomatoes, 1 tablespoon fresh thyme leaves, 1 tablespoon olive oil, 1/8 teaspoon salt, and 1/8 teaspoon black pepper.
  4. Spread the tomato mixture evenly on the prepared baking sheet.
  5. Roast for 10 minutes.
  6. Remove from oven and gently push the tomato mixture to one side of the baking sheet.
  7. Place two 6-ounce salmon fillets on the other side of the baking sheet.
  8. Sprinkle salmon with 1/8 teaspoon salt, 1/8 teaspoon black pepper, and 1/2 tablespoon fresh thyme leaves.
  9. Roast for another 10-12 minutes, or until the salmon is cooked through and the tomatoes are tender. Salmon is cooked through when it flakes easily with a fork.
  10. Spoon the roasted tomatoes and their juices over the salmon before serving.
