How to Make Saskatoon Pie Filling

  1. In a medium saucepan, combine 1/2 cup water and 2 tablespoons lemon juice. Bring to a boil over medium heat.
  2. Add 4 cups fresh Saskatoons (or blueberries) to the saucepan. Return to a boil.
  3. In a separate small bowl, whisk together 1 cup granulated sugar and 1/4 cup cornstarch until completely smooth. No lumps!
  4. Gradually whisk the sugar/cornstarch mixture into the boiling Saskatoon mixture.
  5. Continue to stir constantly over medium heat until the filling thickens and becomes clear, about 5-7 minutes. The consistency should be similar to applesauce.
  6. If canning, immediately pour the hot filling into sterilized pint or quart jars, leaving 1/2 inch headspace.
  7. Remove air bubbles by gently running a non-metallic utensil around the inside of the jar.
  8. Wipe jar rims clean, apply lids and rings, and process in a boiling water bath for 15 minutes (pints) or 20 minutes (quarts).
  9. If not canning, allow the filling to cool completely before using in your favorite pie or dessert recipe.
