How to Make Saskatoon Pie Filling
- In a medium saucepan, combine 1/2 cup water and 2 tablespoons lemon juice. Bring to a boil over medium heat.
- Add 4 cups fresh Saskatoons (or blueberries) to the saucepan. Return to a boil.
- In a separate small bowl, whisk together 1 cup granulated sugar and 1/4 cup cornstarch until completely smooth. No lumps!
- Gradually whisk the sugar/cornstarch mixture into the boiling Saskatoon mixture.
- Continue to stir constantly over medium heat until the filling thickens and becomes clear, about 5-7 minutes. The consistency should be similar to applesauce.
- If canning, immediately pour the hot filling into sterilized pint or quart jars, leaving 1/2 inch headspace.
- Remove air bubbles by gently running a non-metallic utensil around the inside of the jar.
- Wipe jar rims clean, apply lids and rings, and process in a boiling water bath for 15 minutes (pints) or 20 minutes (quarts).
- If not canning, allow the filling to cool completely before using in your favorite pie or dessert recipe.
