How to Make Sausage Vegetable Casserole

  1. Preheat oven to 180°C (350°F).
  2. Fry 500g sausages until browned. Remove from pan and chop into 1-inch pieces. Set aside.
  3. In the same pan, fry 1 large chopped onion and 100g diced bacon until the onion is softened (about 5 minutes).
  4. Add 400g chopped carrots, 200g chopped potatoes, and 100g chopped green beans to the pan and cook for another 5 minutes, stirring occasionally.
  5. In a large casserole dish, combine the cooked sausages, onion, bacon, and vegetables. Stir in 1 can (400g) chopped tomatoes, 500ml chicken stock and 1 tbsp dried mixed herbs.
  6. Season generously with salt and pepper.
  7. Bake uncovered for 30 minutes, or until the vegetables are tender and the sauce has thickened slightly.
  8. Stir in 2 tbsp chopped fresh parsley before serving.
