How to Make Sausage Vegetable Casserole
- Preheat oven to 180°C (350°F).
- Fry 500g sausages until browned. Remove from pan and chop into 1-inch pieces. Set aside.
- In the same pan, fry 1 large chopped onion and 100g diced bacon until the onion is softened (about 5 minutes).
- Add 400g chopped carrots, 200g chopped potatoes, and 100g chopped green beans to the pan and cook for another 5 minutes, stirring occasionally.
- In a large casserole dish, combine the cooked sausages, onion, bacon, and vegetables. Stir in 1 can (400g) chopped tomatoes, 500ml chicken stock and 1 tbsp dried mixed herbs.
- Season generously with salt and pepper.
- Bake uncovered for 30 minutes, or until the vegetables are tender and the sauce has thickened slightly.
- Stir in 2 tbsp chopped fresh parsley before serving.
