How to Make Savory Vegetable Mini Quiches

  1. Preheat oven to 375°F (190°C).
  2. Let pie crusts (2 14.1 oz packages) stand at room temperature for 15 minutes.
  3. Lightly spray a 12-cup mini-muffin pan with vegetable oil.
  4. In a large bowl, whisk together 2 large eggs and ½ cup milk.
  5. Add the following to the bowl: 4 slices cooked bacon, chopped; 1 medium zucchini, diced; 1 cup sliced mushrooms; 2 green onions, thinly sliced; 1 cup shredded cheddar cheese; 2 cloves garlic, minced; and ¼ teaspoon black pepper.
  6. Gently mix until combined.
  7. On a lightly floured surface, roll out one pie crust to a 12-inch circle.
  8. Using a 2 ½-inch round cutter, cut out 12 pastry pieces.
  9. Press one pastry piece into each muffin cup, gently pressing into the bottom and up the sides.
