How to Make Scampi Shrimp Skewers

  1. If your shrimp is frozen, thaw completely before using.
  2. Peel shrimp, leaving tails intact, and devein. Pat dry with paper towels.
  3. In a small saucepan over medium-high heat, melt 4 tablespoons (1/2 stick) of margarine or butter and 1 tablespoon of olive oil.
  4. Add 2 cloves of minced garlic and cook for 2 minutes, or until fragrant. Be careful not to burn the garlic.
  5. Remove from heat and stir in 1/4 cup dry white wine, 2 tablespoons chopped fresh parsley, the zest of 1 lemon, and 1/4 teaspoon of freshly ground black pepper.
  6. Set aside.
  7. Thread shrimp, 4 green onions (sliced into 2-inch pieces), and 1 red bell pepper (cut into 1-inch pieces) onto 6-inch appetizer skewers. Approximately 3 shrimp, 1-2 green onion pieces and 1-2 red bell pepper pieces per skewer.
  8. Preheat grill to medium heat. Grill the skewers for 6-8 minutes, turning once halfway through and brushing generously with the garlic butter mixture.
  9. Grill until shrimp turns pink and opaque and is cooked through. Internal temperature should reach 145°F (63°C).
  10. Remove from grill and serve immediately. Garnish with extra parsley, if desired.
