How to Make Scampi Shrimp Skewers
- If your shrimp is frozen, thaw completely before using.
- Peel shrimp, leaving tails intact, and devein. Pat dry with paper towels.
- In a small saucepan over medium-high heat, melt 4 tablespoons (1/2 stick) of margarine or butter and 1 tablespoon of olive oil.
- Add 2 cloves of minced garlic and cook for 2 minutes, or until fragrant. Be careful not to burn the garlic.
- Remove from heat and stir in 1/4 cup dry white wine, 2 tablespoons chopped fresh parsley, the zest of 1 lemon, and 1/4 teaspoon of freshly ground black pepper.
- Set aside.
- Thread shrimp, 4 green onions (sliced into 2-inch pieces), and 1 red bell pepper (cut into 1-inch pieces) onto 6-inch appetizer skewers. Approximately 3 shrimp, 1-2 green onion pieces and 1-2 red bell pepper pieces per skewer.
- Preheat grill to medium heat. Grill the skewers for 6-8 minutes, turning once halfway through and brushing generously with the garlic butter mixture.
- Grill until shrimp turns pink and opaque and is cooked through. Internal temperature should reach 145°F (63°C).
- Remove from grill and serve immediately. Garnish with extra parsley, if desired.
