How to Make Smoky Kentucky Chili

  1. In a large nonstick skillet, brown 1.5 lbs ground beef and 1 lb ground turkey over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Season the browned meat with 1 tsp smoked salt and 1 tsp smoked pepper. Set aside.
  3. In the same skillet, add 4 cloves minced garlic and toast with 2 tbsp bourbon-smoked chili powder, 1 tbsp chipotle chili powder, 1 tsp cumin, 1 tsp oregano, 1 tsp coriander, 1 tbsp smoked paprika, and 1/2 tsp turmeric until fragrant (about 1 minute).
  4. Transfer the spice mixture to a large pot or slow cooker.
  5. Add the browned meat to the pot or slow cooker.
  6. Stir in 12 oz dark beer, 2 cups beef stock, 28 oz can crushed tomatoes, 15 oz can rinsed & drained black beans, 15 oz can rinsed & drained pinto beans, 2 tbsp Worcestershire sauce, and 1-2 tbsp chipotle pepper sauce (adjust to taste).
  7. Stir to combine thoroughly.
  8. Simmer on low in a large pot for at least 2 hours, or cook in a slow cooker on low for at least 4 hours, or longer for a deeper flavor.
  9. Taste and adjust seasonings as needed before serving.
