How to Make Spiced Bulgur Salad

  1. Toast the 1 cup bulgur wheat in a medium frypan over medium heat for 3-5 minutes, stirring constantly, until it is turning golden and it starts to pop slightly.
  2. Pour the toasted bulgur into a heatproof bowl, add 1 1/2 cups boiling water, cover, and let stand for 10-15 minutes, or until all the water is absorbed.
  3. Meanwhile, heat 2 tablespoons olive oil in the same frypan over medium heat.
  4. Add 1 medium onion, finely chopped; 1 teaspoon ground cinnamon; 1/2 teaspoon ground cardamom; 1/4 teaspoon ground allspice; and 1 teaspoon grated fresh ginger to the frypan.
  5. Cook, stirring frequently, for 5-7 minutes, until the onion is translucent and softened.
  6. Add the cooked onions, 1/2 cup chopped celery, 1/2 cup chopped red bell pepper, 1 can (15 ounces) chickpeas (rinsed and drained), 1/2 cup sultanas, and 1/4 cup toasted pine nuts to the cooked bulgur.
  7. Stir in 2 tablespoons of the chopped fresh herbs (parsley and mint). Season generously with salt and pepper to taste, and gently fold everything together.
  8. Garnish with the remaining fresh herbs and serve warm or at room temperature.
