How to Make Spinach And Mushroom Quiche

  1. Preheat oven to 400°F (200°C).
  2. Cook 4 slices bacon in a large skillet over medium-high heat until crispy. Remove bacon, crumble, and set aside. Reserve 1 tablespoon bacon grease.
  3. Sauté 1/2 cup chopped onion in the reserved bacon grease until softened, about 3 minutes.
  4. Add 8 oz cremini mushrooms, sliced, and cook until tender, about 5 minutes.
  5. Stir in 5 oz fresh spinach and cook until wilted, about 2 minutes.
  6. In a large bowl, whisk together 4 large eggs, 1 cup heavy cream, 1/4 teaspoon nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  7. Stir in the cooked bacon, mushroom and spinach mixture, 3/4 cup shredded Swiss cheese, and 3/4 cup shredded cheddar cheese.
  8. Pour the egg mixture into a 9-inch unbaked pie crust.
  9. Top with the remaining 1/4 cup of each cheese.
  10. Bake for 35-40 minutes, or until the quiche is set and lightly golden brown.
