How to Make Asparagus Bacon Quiche
- Preheat oven to 450°F (232°C). Line a 9-inch unbaked pie crust with a double thickness of heavy-duty aluminum foil.
- Bake for 5 minutes.
- Remove foil and bake for another 5 minutes. Remove from oven and set aside.
- While the crust bakes, snap off the tough ends of 1 pound asparagus and cut into 1-inch pieces. Boil in a small amount of salted water until crisp-tender, about 3-4 minutes.
- Drain asparagus well and set aside.
- Cook 4 slices bacon until crisp. Crumble and set aside.
- Arrange the cooked bacon and asparagus evenly in the pre-baked pie crust.
- In a medium bowl, whisk together 4 large eggs, 1 cup heavy cream, 1/2 cup shredded cheddar cheese (or your favorite cheese), 1/4 cup finely chopped yellow onion, 1 teaspoon sugar, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and a pinch of freshly grated nutmeg.
- Pour the egg mixture evenly over the asparagus and bacon.
- Sprinkle the remaining 1/2 cup shredded cheddar cheese over the top.
- Bake at 400°F (204°C) for 10 minutes.
- Reduce oven temperature to 350°F (177°C) and continue baking for 23-25 minutes, or until a knife inserted near the center comes out clean.
