How to Make Swiss Baked Trout

  1. Preheat oven to 400°F (200°C).
  2. Grease a shallow baking pan (approximately 9x13 inches).
  3. Finely chop 1/2 cup onion, 1/4 cup fresh parsley, and 8 ounces of sliced mushrooms.
  4. Spread the onion, parsley, and mushroom mixture evenly in the bottom of the prepared baking pan.
  5. Season the trout generously with salt and pepper, both inside and out.
  6. Place the trout on top of the vegetable mixture in the baking pan.
  7. Pour 1/4 cup (1/2 stick) melted butter over the trout. Cover the baking pan tightly with aluminum foil.
  8. Bake for 15 minutes.
  9. Remove from oven. Sprinkle 1/2 cup bread crumbs and 1/2 cup shredded Swiss cheese evenly over the trout.
  10. Pour the remaining 1/4 cup (1/2 stick) melted butter and 2 tablespoons dry vermouth over the bread crumbs and cheese.
  11. Sprinkle lightly with paprika.
  12. Cover the baking pan with foil again. Return to the oven and bake for another 10 minutes.
  13. For extra crispy bread crumbs, carefully broil for 30-60 seconds, watching closely to prevent burning.
