How to Make Taco Spuds

  1. Preheat oven to 375°F (190°C). Wash and scrub potatoes thoroughly.
  2. Cut potatoes in half lengthwise.
  3. Carefully scoop out the potato pulp, leaving a 1/4-inch thick shell. Set the pulp aside (optional: you can mash it and add it to the taco meat for extra potato flavor!).
  4. Brush the inside and outside of the potato shells with melted butter.
  5. Place cut-side up on an ungreased baking sheet.
  6. Bake for 10-15 minutes, until slightly softened.
  7. While potatoes bake, heat a large skillet over medium heat. Add ground beef and onion; cook, breaking up the meat, until browned.
  8. Drain off any excess grease.
  9. Stir in the diced tomatoes (undrained) and taco seasoning.
  10. Bring to a simmer, then reduce heat and cook for 20 minutes, stirring occasionally, until the sauce has thickened slightly.
  11. Spoon the beef mixture into the prepared potato shells.
  12. Sprinkle generously with shredded cheddar cheese.
  13. Bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  14. Top with sour cream and chopped green onions before serving. Enjoy!
