How to Make Taco Spuds
- Preheat oven to 375°F (190°C). Wash and scrub potatoes thoroughly.
- Cut potatoes in half lengthwise.
- Carefully scoop out the potato pulp, leaving a 1/4-inch thick shell. Set the pulp aside (optional: you can mash it and add it to the taco meat for extra potato flavor!).
- Brush the inside and outside of the potato shells with melted butter.
- Place cut-side up on an ungreased baking sheet.
- Bake for 10-15 minutes, until slightly softened.
- While potatoes bake, heat a large skillet over medium heat. Add ground beef and onion; cook, breaking up the meat, until browned.
- Drain off any excess grease.
- Stir in the diced tomatoes (undrained) and taco seasoning.
- Bring to a simmer, then reduce heat and cook for 20 minutes, stirring occasionally, until the sauce has thickened slightly.
- Spoon the beef mixture into the prepared potato shells.
- Sprinkle generously with shredded cheddar cheese.
- Bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Top with sour cream and chopped green onions before serving. Enjoy!
