How to Make Bill Blass S Meatloaf

  1. Preheat oven to 350°F (175°C).
  2. Grease an 8x4 inch loaf pan with 1 tablespoon of olive oil and set aside.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter. Add 1 cup chopped celery and 1/2 cup chopped onion and sauté until softened, about 5-7 minutes.
  4. Remove from heat and let cool for 5 minutes.
  5. Add to the skillet: 1.5 lbs ground beef, 0.5 lbs ground pork, 1/4 cup chopped fresh parsley, 1/2 cup sour cream, 1 cup breadcrumbs, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon garlic powder.
  6. In a small bowl, whisk 1 large egg with 1 tablespoon Worcestershire sauce. Add to the meat mixture.
  7. Gently combine all ingredients using a wooden spoon or your hands, being careful not to overmix. Shape the mixture into a loaf.
  8. Place the meatloaf in the prepared pan.
  9. Top with 1/2 cup chili sauce and 4-5 slices of bacon.
  10. Place the loaf pan on a baking sheet to catch drips. Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is browned.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
