How to Make The Mayflower Inn Shepherd's Pie

  1. In a large saucepan or Dutch oven, heat 2 tablespoons olive oil over medium-high heat. Add 1.5 lbs sirloin, cut into 1-inch cubes, and brown on all sides. Remove sirloin from pan and set aside.
  2. Add 1 large onion, chopped, 2 carrots, chopped, and 1 leek, thinly sliced, to the pan. Cook, stirring occasionally, for 5 minutes until softened.
  3. Pour in 1 cup dry red wine (like Cabernet Sauvignon or Merlot) and simmer for 10 minutes, scraping up any browned bits from the bottom of the pan.
  4. Add 8 oz cremini mushrooms, sliced, 2 tablespoons fresh thyme leaves, 2 cloves garlic, minced, and cook for another 5 minutes.
  5. Return the sirloin to the pan. Add 1 ½ cups beef broth, bring to a boil, then reduce heat and simmer for 30 minutes, or until the sirloin is tender.
  6. Stir in 1 (10.75 ounce) can condensed beef gravy. Season generously with salt and pepper to taste.
  7. Meanwhile, peel and chop 2 lbs russet potatoes. Place in a large saucepan and cover with cold water by 2 inches. Add 1 teaspoon salt.
  8. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are very tender.
  9. Drain the potatoes and return them to the saucepan. Add ½ cup sour cream, 4 tablespoons butter, and salt and pepper to taste. Mash until smooth and creamy.
  10. Preheat oven to 350°F (175°C).
  11. Transfer the meat mixture to a 9x13 inch baking dish.
  12. Spread the mashed potatoes evenly over the meat mixture. You can use a piping bag or spoon for a decorative finish.
  13. Bake for 30 minutes, or until the potatoes are golden brown and bubbly.
