How to Make Green Chile Tamale Pie

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together masa harina, 1 teaspoon salt, and 1/2 teaspoon ground red pepper.
  3. Gradually add 1 cup of boiling water to the masa mixture, stirring constantly until a soft dough forms. Cover and set aside.
  4. Heat 2 tablespoons olive oil in a 9-inch cast-iron skillet over medium-high heat.
  5. Add 1 pound ground beef and cook for 5 minutes, or until browned, breaking it up with a spoon.
  6. Add 1 medium chopped onion, 2 minced garlic cloves, 1 chopped poblano chile, 3/4 teaspoon salt, and 1/4 teaspoon black pepper to the skillet.
  7. Sauté for 5 minutes, or until the onion is tender, stirring frequently.
  8. Stir in 1 cup chopped tomatillos and 1 cup drained and rinsed lima beans. Cook for 2 minutes.
  9. Remove the skillet from the heat.
  10. In the masa mixture, stir in 2 tablespoons of butter and 1 teaspoon baking powder until smooth.
  11. Spoon the masa batter evenly over the beef and vegetable filling in the skillet.
  12. Cover the skillet with foil.
  13. Bake for 30 minutes.
  14. Remove the foil and bake for an additional 10 minutes, or until the crust is lightly browned around the edges.
  15. Remove from the oven and let stand for 3 minutes.
  16. Sprinkle with crumbled queso fresco and chopped cilantro.
  17. Serve immediately with lime wedges.
