How to Make Ty Cobb's Sweet Chili Con Carne With Beans
- In a large Dutch oven, sauté the chopped onion and minced garlic in 2 tablespoons of olive oil over medium heat until softened (about 5 minutes).
- Add the 1.5 lbs of ground beef and cook, breaking it up with a spoon, until no longer pink. Drain off any excess grease.
- Stir in the 1/4 cup water, crushed tomatoes, tomato sauce, diced tomatoes and green chilies, beef broth, sweet chili sauce, chili powder, cumin, oregano, and cayenne pepper (if using). Season with salt and pepper to taste.
- Bring to a simmer, then reduce heat to low, cover, and simmer for at least 1 hour, or up to 2 hours, stirring occasionally. (For a thicker chili, simmer uncovered for the last 30 minutes.)
