How to Make Vegan Baklava

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking pan.
  2. In a medium bowl, combine chopped walnuts, pistachios, and cinnamon.
  3. Lay one sheet of phyllo pastry in the prepared pan, brushing it lightly with melted vegan butter. Repeat with 10 more sheets, ensuring each layer is brushed with butter.
  4. Sprinkle one-third of the nut mixture over the phyllo layers.
  5. Repeat layers of phyllo and butter 5 times, sprinkling another third of nut mixture after the 5th layer and then after the 10th layer.
  6. Top with the remaining phyllo sheets, brushing each with butter.
  7. Cut the baklava into diamond or square shapes using a sharp knife.
  8. Bake for 45-60 minutes, or until golden brown and crispy.
  9. While the baklava is baking, prepare the syrup. In a saucepan, combine water, sugar, orange juice, lemon juice, cinnamon stick, and vanilla extract. Bring to a boil, then reduce heat and simmer for 15 minutes.
  10. Remove the cinnamon stick from the syrup.
  11. Pour the hot syrup evenly over the hot baklava immediately after removing it from the oven.
  12. Let the baklava cool completely before serving. Enjoy!
