How to Make Whole Wheat Apple Nut Bread

  1. Preheat oven to 350°F (175°C).
  2. Grease the bottom and 1 inch up the sides of a 1 1/2-quart casserole dish.
  3. In a large bowl, whisk together 2 cups whole wheat flour, 1 cup all-purpose flour, 2 teaspoons baking powder, 1 teaspoon baking soda, 1 teaspoon salt, and 1 teaspoon ground cinnamon.
  4. Make a well in the center of the dry ingredients.
  5. In a medium bowl, whisk together 2 large eggs, 1/2 cup unsweetened applesauce, 1/2 cup plain yogurt, 3/4 cup packed light brown sugar, and 1/4 cup vegetable oil.
  6. Pour the wet ingredients into the well of the dry ingredients.
  7. Stir gently until just combined. Do not overmix.
  8. Fold in 1 cup chopped walnuts or pecans and 1/2 cup raisins.
  9. Pour batter into the prepared casserole dish.
  10. Sprinkle the top with 2 tablespoons wheat germ.
  11. Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean. Cover loosely with foil during the last 15 minutes to prevent over-browning.
  12. Let the bread cool in the casserole dish on a wire rack for 10 minutes.
  13. Remove the bread from the casserole dish and let it cool completely on the wire rack.
  14. For best flavor, wrap and store overnight before slicing.
  15. Enjoy! Makes 12 servings.
