Zubereitung von Low Fat Carrot Fruit Loaf
- Preheat oven to 180°C (350°F). Grease and flour a 10cm x 20cm loaf tin.
- In a medium saucepan, combine 200g grated carrots, 1 medium apple (cored and diced), 100g sultanas, 50g chopped dried apricots, 100ml apple juice, 50ml water, 100g brown sugar, 1 tsp ground cinnamon. Bring to a boil, then reduce heat and simmer for 15 minutes. Remove from heat and let cool completely.
- In a large bowl, sift together 200g wholewheat flour, 100g plain flour, 1 tsp baking soda. Add the cooled fruit mixture, 2 ripe bananas (mashed), and optionally 100g grated zucchini and 100g crushed pineapple. Gently fold until just combined.
- Pour batter into the prepared loaf tin. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
