  1. Place 500g fresh apricots in a pan of boiling water and boil for 5 minutes.
  2. Drain the apricots and rinse under cold water. Add to a blender with 50ml of water.
  3. Blend until completely smooth. This boiling and draining process softens the apricots and removes some of the naturally occurring sulphur used in preservation.
  4. In a large saucepan, combine the blended apricots, 700g granulated sugar, and 200g grated carrots.
  5. Bring the mixture to a rolling boil over medium-high heat, then reduce heat and simmer for 20 minutes, or until the marmalade reaches setting point (a small amount placed on a chilled plate wrinkles when pushed with a finger).
  6. Meanwhile, soak 50g goji berries in 50ml freshly squeezed orange juice and 25ml freshly squeezed lemon juice.
  7. Towards the end of the 20-minute simmering time, stir in the soaked goji berries and their juice.
  8. Return to a boil, and skim off any foam that rises to the surface.
  9. Stir in 25g butter. Boil for another 2-3 minutes.
  10. Allow the marmalade to cool slightly before transferring it to sterilized Kilner jars to ensure even distribution of the ingredients. Alternatively, store in the refrigerator for up to 1 month.
