  4. Stir in 1 cup frozen peas, 1 tsp cumin seeds, 1 tsp ground coriander, ½ tsp chili powder, ¼ tsp turmeric, 1 tbsp garlic puree, and 2 tbsp chopped fresh cilantro or mint into the potatoes and carrots.
  5. Season generously with salt and pepper to taste.
  6. Allow the filling to cool completely.
  7. Preheat oven to 350°F (180°C). Lightly mist baking sheets with cooking spray.
  8. Cut 1 package (14.1 oz) filo pastry sheets into strips approximately 12 inches x 4 inches.
  9. Place a heaping tablespoon of the filling at one end of each pastry strip.
  10. Fold over one corner to form a triangle, then continue folding over to create a sealed samosa shape.
  11. Repeat with remaining pastry and filling to make approximately 20 samosas.
