How to Make Samosa

  1. Boil 1 lb potatoes and 1 cup carrots, peeled and chopped, in salted water until tender (about 10 minutes).
  2. Drain the potatoes and carrots and partially mash them with a fork.
  3. Lightly mist a non-stick frying pan with cooking spray. Sauté 1 medium onion, chopped, until softened (about 2 minutes).
  4. Stir in 1 cup frozen peas, 1 tsp cumin seeds, 1 tsp ground coriander, ½ tsp chili powder, ¼ tsp turmeric, 1 tbsp garlic puree, and 2 tbsp chopped fresh cilantro or mint into the potatoes and carrots.
  5. Season generously with salt and pepper to taste.
  6. Allow the filling to cool completely.
  7. Preheat oven to 350°F (180°C). Lightly mist baking sheets with cooking spray.
  8. Cut 1 package (14.1 oz) filo pastry sheets into strips approximately 12 inches x 4 inches.
