How to Make 7 Up Pork Roast With Glaze

  1. Pat a 3-4 lb pork loin dry with paper towels.
  2. Place the pork loin in a large resealable plastic bag.
  3. In a bowl, whisk together 1 cup 7 Up, 1/4 cup soy sauce, 1/2 cup chopped red bell pepper, 1/4 cup chopped onion, and 2 cloves minced garlic.
  4. Pour the marinade over the pork loin in the bag.
  5. Seal the bag, removing as much air as possible, and marinate in the refrigerator for at least 4 hours, or preferably overnight.
  6. Preheat oven to 325°F (160°C).
  7. Place the bag (unsealed) in a large roasting pan.
  8. Make 6-8 slits in the top of the bag to allow steam to escape.
  9. Roast for 1 hour 45 minutes to 2 hours, or until a meat thermometer inserted into the thickest part registers 145°F (63°C).

  11. Discard the vegetables from the roasting pan.
