How to Make 90 Minute Peanut Butter Rolls
- In a large mixing bowl, combine 1 1/2 cups flour, 1/4 cup granulated sugar, 2 1/4 teaspoons RapidRise yeast, and 1 teaspoon salt.
- In a small saucepan, heat 1/2 cup milk, 1/4 cup water, and 1/4 cup peanut butter until warm (120-130°F).
- Gradually add the warm milk mixture to the dry ingredients, mixing with a wooden spoon until just combined.
- Beat with an electric mixer on medium speed for 2 minutes.
- Add 1 large egg and 1/2 cup flour; beat on high speed for 2 minutes.
- Stir in enough of the remaining flour by hand to form a soft dough.
- Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
- In a separate bowl, combine 1/2 cup peanut butter, 1/4 cup granulated sugar, 1/4 cup brown sugar, and 1/4 cup milk until smooth.
- Cover the dough and let it rest for 10 minutes.
- Divide the dough in half.
- Roll each half into a 14x8 inch rectangle.
- Spread the peanut butter filling evenly over each rectangle.
- Roll up each rectangle tightly, pinching the seam to seal.
- Cut each roll into 8 equal pieces.
- Place the rolls cut-side up in two greased 9-inch round cake pans.
- Cover and let rise in a warm, draft-free place until doubled in size (about 45 minutes).
- Bake at 375°F (190°C) for 20-25 minutes, or until golden brown.
- Remove from pans and cool on a wire rack.
- Melt 1/2 cup semi-sweet chocolate chips with 2 tablespoons of milk in a microwave-safe bowl or double boiler, stirring until smooth.
- Drizzle the chocolate glaze over the cooled rolls.
- Sprinkle with 1/4 cup chopped peanuts.
