Ingredients for Abm Hot Cross Buns

  • 1 cup (240ml) warm milk
  • Butter
  • Egg
  • 1 tsp salt
  • 4 cups (500g) all-purpose flour
  • Cinnamon
  • Nutmeg
  • Ground Cloves
  • Raisins
  • 2 ¼ tsp (7g) active dry yeast

How to Make Abm Hot Cross Buns

  1. Prepare your Abm according to the manufacturer's instructions. Add all dry ingredients (flour, sugar, spices, yeast, salt) to the bread maker pan.
  2. Add the wet ingredients (milk, eggs, melted butter, and orange zest) to the bread maker pan, following the correct order as recommended by your Abm's instruction manual.
  3. Select the appropriate dough setting on your Abm. The first rise will happen in the machine (check your Abm's manual for the timing).
  4. Once the first rise is complete, carefully remove the dough from the Abm. Gently punch down the dough and shape into 12 evenly sized buns.
  5. Place the buns on a baking sheet lined with parchment paper. Cover loosely with plastic wrap and let them rise for the second time. The time for this second rise will depend on your kitchen environment and the Abm's first rise time. Plan for at least 30-45 minutes.
  6. Preheat your oven to 350°F (175°C).
  7. Bake the buns for 20-25 minutes, or until golden brown.
  8. While the buns are baking, prepare the glaze: In a small bowl, whisk together ¾ cup (90g) icing sugar, 1 tablespoon (15ml) milk, and 2 drops of almond extract.
  9. Once the buns are baked, let them cool slightly on a wire rack.
  10. Drizzle the glaze over the warm buns and enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
