How to Make African Chicken

  1. Brown 1.5 lbs boneless, skinless chicken thighs in 2 tablespoons vegetable oil in a large frying pan over medium-high heat. Cook until browned on all sides.
  2. Set chicken aside.
  3. Remove all but 2 tablespoons of oil and drippings from the pan.
  4. Stir in 2 tablespoons curry powder, 1 teaspoon salt, 1 medium onion (chopped), 1 red bell pepper (chopped), 1 (14.5 ounce) can diced tomatoes (undrained), and 1 cup long-grain rice.
  5. Cover and simmer for 5 minutes, stirring occasionally.
  6. Return the chicken to the pan.
  7. Cover and simmer for 20-25 minutes, or until the chicken is cooked through and tender.
  8. While the chicken simmers, whisk together 1/2 cup creamy peanut butter and 1/2 cup water until smooth.
  9. Stir the peanut butter mixture into the vegetables.
  10. Bring to a boil, then reduce heat and simmer for 2-3 minutes, or until the sauce has thickened slightly.
  11. Remove chicken to a large platter and spoon the peanut sauce over the top.
