Ingredients for African Ginger Cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tablespoons ground ginger
  • Red Pepper
  • Butter
  • Water

How to Make African Ginger Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour a baking sheet or line it with parchment paper.
  2. In a large bowl, whisk together the flour, ground ginger, cinnamon, cloves, nutmeg, baking powder, and salt.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  5. Drop by rounded tablespoons onto the prepared baking sheet, leaving some space between each cookie.
  6. Bake for 15-18 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. (Optional) While the cookies cool, prepare the glaze by whisking together the powdered sugar and milk (or lemon juice) until smooth. Drizzle the glaze over the cooled cookies.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
