How to Make After The Dance Cookies

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in chocolate chips, if desired.
  6. Drop rounded teaspoons of cookie dough onto the prepared baking sheet, leaving some space between each cookie.
  7. Place the baking sheet into the preheated oven. Immediately turn the oven OFF.
  8. Leave the cookies in the oven for 3-4 hours, or even overnight. Do not open the oven door during this time!
  9. Carefully remove the cookies from the oven and let them cool completely on the baking sheet before peeling them off the parchment paper or foil.
  10. Store in an airtight container at room temperature for up to a week.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
