How to Make All American Molasses Baked Beans

  1. Place 1 pound dried beans in a large bowl and cover with at least 3 inches of cold water.
  2. Soak overnight (or for at least 8 hours).
  3. Drain the beans thoroughly.
  4. In a large heavy saucepan, combine the drained beans and 2 bay leaves.
  5. Add enough water to cover the beans by 3 inches.
  6. Bring to a boil, then reduce heat to low and simmer gently for 45 minutes, or until beans are tender. Add more water if needed to prevent sticking.
  7. Drain the beans, reserving 4 cups of the cooking liquid.
  8. Preheat oven to 350°F (175°C).
  9. In a large, oven-safe pot with a lid, combine 1 medium onion (chopped), 4 ounces salt pork (diced), 1 cup ketchup, ½ cup packed brown sugar, ½ cup molasses, 1 tablespoon dry mustard, and 1 teaspoon black pepper.
  10. Stir in the drained beans and 3 cups of the reserved cooking liquid.
  11. Cover the pot tightly with foil, then with the lid.
  12. Bake for 2 ½ hours, or until the beans are very tender and the liquid has been absorbed, adding more reserved cooking liquid if necessary to prevent dryness.
