Ingredients for Beetroot Rice
- 2 tablespoons butter
- Cumin Seed
- 1/2 teaspoon mustard seeds
- Garlic Clove
- 1 inch grated ginger
- Beet
- 1/2 teaspoon sambal powder
- 1/4 teaspoon garam masala powder
- 1 cup frozen peas
- 2 cups cooked basmati rice
- Salt
How to Make Beetroot Rice
- Melt 2 tablespoons of butter in a medium-sized pan over medium heat.
- Add 1 teaspoon cumin seeds and 1/2 teaspoon mustard seeds. Let them splutter for about 30 seconds.
- Add 2 cloves minced garlic and 1 inch of grated ginger. Saute for 30 seconds until fragrant.
- Add 2 cups of cooked and diced beetroot (about 2 medium beets).
- Cook on low heat for 5-7 minutes, stirring occasionally, until beets are slightly softened. Add 1-2 tablespoons of water if needed to prevent sticking.
- Stir in 1/2 teaspoon sambal powder and 1/4 teaspoon garam masala powder. Cook for another minute.
- Add 1 cup of frozen peas.
- Add 2 cups of cooked basmati rice.
- Stir gently to combine the rice and beetroot mixture. Cook for 2-3 minutes, until heated through and the rice is evenly colored.
- Garnish with fresh cilantro (optional) and serve hot.
