How to Make Almost Hal's Hearty Vegetable Soup

  1. Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
  2. Add 1 medium onion, chopped, and 2 carrots, chopped, and cook until softened, about 5 minutes.
