How to Make Alotizzip Marinated Artichokes Mushrooms
- Wipe 1 pound of mushrooms with a moist paper towel to clean.
- Trim stems and cut mushrooms into bite-sized pieces.
- Bring a pot of salted water to a boil. Add mushrooms and boil for 3 minutes.
- Drain mushrooms and transfer to a large bowl.
- Add 14 ounces of artichoke hearts (from a jar, including brine) to the bowl.
- Add 1/2 cup thinly sliced red onion, 1/2 cup pitted Kalamata olives, and 1/4 cup thinly sliced red bell pepper.
- In a separate bowl, whisk together 1/2 cup extra virgin olive oil, 1/4 cup red wine vinegar, 2 tablespoons sherry, 1 teaspoon salt, 1 teaspoon dried oregano, and 1/2 teaspoon black pepper.
- Pour the marinade over the mushroom and artichoke mixture. Stir to combine.
