How to Make Amaretto Brunch Omelet
- In a small bowl, gently toss the mixed berries with 1 tablespoon of amaretto. Set aside.
- In a separate bowl, beat the softened cream cheese with 2 tablespoons of amaretto until smooth and creamy. Set aside. This is your filling.
- In a small bowl, whisk together the eggs, milk, and the remaining 2 tablespoons of amaretto until light and frothy.
- Melt 1 tablespoon of butter in a medium-sized nonstick omelet pan or skillet over medium-high heat.
- Pour half of the egg mixture into the heated pan. Let it cook undisturbed until the edges begin to set.
- Gently tilt the pan to allow uncooked egg to flow underneath the set portions. Once mostly set but still slightly wet on top, spoon half of the cream cheese filling onto one half of the omelet.
- Using a spatula, carefully lift the edge of the omelet opposite the filling and gently fold it over the filling.
- Gently slide the omelet onto a serving plate.
- Repeat steps 4-8 with the remaining butter, egg mixture, and cream cheese filling to create a second omelet.
- Spoon the amaretto-soaked berries over the finished omelets. Garnish with sour cream and a sprinkle of brown sugar.
