How to Make Basmati Rice With Turmeric And Mushrooms
- Rinse 1 cup of basmati rice thoroughly under cold water until the water runs clear.
- Soak the rinsed rice in a large bowl of cold water for 30 minutes. (Optional, but recommended for extra fluffy rice)
- Melt 2 tablespoons of butter in a heavy-bottomed saucepan or oven-safe dish over medium heat.
- Add 1 medium onion (chopped) and 2 cloves garlic (minced), and 1 teaspoon of turmeric powder. Sauté for 3-5 minutes, until fragrant and onions begin to soften.
- Stir in 1 cup of basmati rice, 2 cups of vegetable or chicken broth, 8 ounces of mushrooms (sliced – fresh or canned), 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- If using stovetop: Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15-20 minutes, or until all liquid is absorbed and rice is tender. If baking in a preheated 375°F (190°C) oven: Cover the dish tightly with foil and bake for 20-25 minutes, or until all liquid is absorbed and rice is tender.
