How to Make Amarula Cheesecake

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 10-inch springform pan with cooking spray and set aside.
  3. In a medium bowl, combine 1 ½ cups graham cracker crumbs and ¼ cup melted unsalted butter. Mix until moist.
  4. Press crumb mixture into the bottom of the prepared pan. Bake for 10 minutes.
  5. Remove from oven and let cool completely.
  6. In a large bowl, beat 2 (8-ounce) packages cream cheese and 1 ½ cups granulated sugar with an electric mixer until smooth and creamy.
  7. Beat in 8 ounces mascarpone cheese until well combined.
  8. Add 4 large eggs one at a time, mixing well after each addition.
  9. Stir in 1 teaspoon vanilla extract and ¼ cup Amarula cream liqueur.
  10. Pour batter into the prepared crust. Drizzle ½ cup caramel topping over the batter.
  11. Using a toothpick, gently swirl the caramel into the cheesecake batter.
  12. Wrap the bottom and sides of the springform pan tightly with aluminum foil.
  13. Place the pan in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan.
  14. Bake for 1 hour and 30 minutes, or until the center is just set and the edges are golden brown. The cheesecake should spring back slightly when gently touched but still have a slight wobble in the center.
  15. Insert a toothpick into the center; it should come out with a few moist crumbs attached but not wet batter.
  16. Remove from water bath and let cool completely on a wire rack.
  17. Refrigerate for at least 6 hours, or preferably overnight, before serving.
  18. Serve chilled with your favorite toppings, such as chocolate sauce, fresh berries, or whipped cream.
