- Preheat oven to 350°F (175°C).
- Separate and peel 1 head of garlic (about 12-16 cloves).
- In an oven-safe baking dish (approximately 8x8 inch), combine 1/4 cup olive oil, 2-3 small red chilies (finely chopped or sliced), and the peeled garlic cloves. The oil should cover the bottom of the dish.
- Roast the garlic, covered, for 30 minutes, or until golden brown and easily mashed with a fork.
