Ingredients for Angel Delights

  • Unsalted Butter
  • 1 cup (200g) granulated sugar
  • Pitted Dates
  • 1/4 teaspoon salt
  • Vanilla Extract
  • Toasted Rice Cereal
  • Shredded Coconut

How to Make Angel Delights

  1. In a large saucepan, combine 1/2 cup (113g) unsalted butter, 1 cup (200g) granulated sugar, and 1 cup (150g, packed) pitted dates.
  2. Cook over medium heat, stirring constantly, until the butter is melted, the sugar is dissolved and the dates are softened and mostly melted (8-15 minutes). The mixture should be a shiny, brown, sticky mass.
  3. Remove from the heat and stir in 1/4 teaspoon salt and 1 teaspoon vanilla extract.
  4. Add 3 cups (75g) toasted rice cereal and 1 cup (100g) shredded coconut.
  5. Stir well to combine thoroughly.
  6. Once the mixture is cool enough to handle (about 30 minutes), use a spoon or your hands to form 1-inch balls.
  7. Place the balls on a wax paper-lined baking sheet.
  8. Refrigerate for at least 30 minutes, or up to 1 week, until chilled and set.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
