How to Make Angel Hair Pasta With Fresh Tomato Sauce
- Finely chop 1 medium onion. Mince 4 cloves of garlic. Roughly chop 2 lbs ripe tomatoes.
- In a large bowl, combine the chopped tomatoes, onion, 1/4 cup packed fresh basil leaves, 2 tablespoons red wine vinegar, 4 tablespoons extra virgin olive oil, minced garlic, and 1 teaspoon sugar. Gently mix.
- Cover the bowl with plastic wrap and let it sit at room temperature for at least 2 hours (or up to 4 hours for a richer flavor).
- While the sauce infuses, bring a large pot of salted water to a boil. Add 8 oz angel hair pasta and cook according to package directions until al dente. Reserve about 1/2 cup pasta water before draining.
