How to Make Ann's Old Fashioned Meatloaf

  1. Preheat oven to 350°F (175°C).
  2. Saute 1 medium onion, chopped, and 2 medium carrots, chopped, in 2 tablespoons of olive oil until carrots are tender (about 8-10 minutes).
  3. Add 2 cloves garlic, minced, and saute for 1-2 minutes more.
  4. Remove from heat and set aside to cool.
  5. In a large bowl, combine 2 lbs ground beef, 1 cup bread crumbs, and the cooled vegetables.
  6. In a separate bowl, whisk together 2 large eggs, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon dried thyme, 1 teaspoon dried parsley, 1 tablespoon Worcestershire sauce, and 1/2 cup ketchup.
  7. Gently pour the egg mixture over the beef mixture and use your hands to combine until just mixed. Do not overmix.
  8. Pat the mixture gently into a greased 9x5 inch loaf pan. Do not press down too firmly.
  9. Pour 1/2 cup tomato sauce evenly over the top.
  10. Bake for 1 hour and 5 minutes.
  11. Remove from oven and let cool on a wire rack for 10 minutes before slicing.
  12. Cut into thick slices and serve warm or cold with extra tomato sauce, if desired. Crushed canned tomatoes can be substituted for the fresh tomatoes.
