How to Make Ann S Old Fashioned Meatloaf
- Preheat oven to 350°F (175°C).
- Saute 1 medium onion, chopped, and 2 medium carrots, chopped, in 2 tablespoons of olive oil until carrots are tender (about 8-10 minutes).
- Add 2 cloves garlic, minced, and saute for 1-2 minutes more.
- Remove from heat and set aside to cool.
- In a large bowl, combine 2 lbs ground beef, 1 cup bread crumbs, and the cooled vegetables.
- In a separate bowl, whisk together 2 large eggs, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon dried thyme, 1 teaspoon dried parsley, 1 tablespoon Worcestershire sauce, and 1/2 cup ketchup.
- Gently pour the egg mixture over the beef mixture and use your hands to combine until just mixed. Do not overmix.
- Pat the mixture gently into a greased 9x5 inch loaf pan. Do not press down too firmly.
- Pour 1/2 cup tomato sauce evenly over the top.
- Bake for 1 hour and 5 minutes.
- Remove from oven and let cool on a wire rack for 10 minutes before slicing.
- Cut into thick slices and serve warm or cold with extra tomato sauce, if desired. Crushed canned tomatoes can be substituted for the fresh tomatoes.
