How to Make Another Awesome Pot Roast
- Preheat oven to 325°F (160°C).
- Peel and chop 2 lbs potatoes into 1-inch cubes.
- Peel and chop 1 lb carrots into 1-inch pieces.
- Place potatoes and carrots in the bottom of a 6-quart slow cooker.
- Place a 3-4 lb beef chuck roast on top of the vegetables.
- Sprinkle 3 packets of your favorite beef seasoning blend (or 3 tablespoons of your own custom blend) evenly over the roast.
- Pour 1 cup of beef broth into the slow cooker.
- Cook on low for 6-8 hours, or until the roast is fork-tender and the vegetables are cooked through. For a richer flavor, cook on high for 4-6 hours.
- Remove the roast from the slow cooker and let it rest for 10 minutes before slicing against the grain.
