Ingredients for Apple Almond Teacake

  • 125g unsalted butter, softened
  • Caster Sugar
  • 2 large eggs
  • Self Raising Flour
  • Plain Flour
  • 125ml milk
  • 1 medium apple, peeled, cored, and thinly sliced
  • Slivered Almonds

How to Make Apple Almond Teacake

  1. Preheat oven to 180°C (160°C fan-forced). Grease and line a 20cm round, deep cake pan with baking paper.
  2. In a small bowl, cream together the butter and sugar using an electric mixer until pale, light, and fluffy (approximately 3-5 minutes).
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. In a large bowl, gently combine half of the milk and half of the sifted flour with the creamed mixture.
  5. Stir in the remaining milk and flour until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan.
  7. Arrange apple slices evenly over the top of the batter.
  8. Sprinkle the sliced almonds evenly over the apples.
  9. Bake for 45-55 minutes, or until a skewer inserted into the center comes out clean.
  10. Let the cake stand in the pan for 5 minutes before carefully inverting it onto a wire rack to cool completely.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
