Ingredients for Apple Cinnamon Pork Tenderloin

  • 1.5-2 lb pork tenderloin
  • Cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • Apples
  • 1/4 cup dried cranberries

How to Make Apple Cinnamon Pork Tenderloin

  1. Preheat oven to 400°F (200°C).
  2. Place the 1.5-2 lb pork tenderloin in a roasting pan or casserole dish.
  3. In a medium bowl, combine 1/2 cup apple cider, 1/4 cup dried cranberries, 1/4 cup brown sugar, 2 tablespoons apple cider vinegar (optional), 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 1/4 teaspoon salt.
  4. Pour 1/4 cup of the apple mixture into the bottom of the roasting pan.
  5. Spoon the remaining apple mixture evenly around the pork tenderloin. Cover the roasting pan tightly with foil.
  6. Bake for 30 minutes.
  7. Remove the foil. Spoon the apple mixture over the top of the tenderloin.
  8. Bake for another 15-20 minutes, or until a meat thermometer inserted into the thickest part of the tenderloin registers 155-160°F (68-71°C).
  9. Let the pork tenderloin rest for 10 minutes before slicing and serving.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
