How to Make Apple Beef Stew

  1. In a large pot or Dutch oven, brown 1.5 lbs beef stew meat in 2 tablespoons of butter over medium-high heat. Remove beef and set aside.
  2. Add 1 large chopped onion to the pot and cook until softened, about 5 minutes.
  3. Sprinkle 3 tablespoons of all-purpose flour over the onions and cook for 1 minute, stirring constantly.
  4. Gradually whisk in 2 cups of beef broth and 1 cup of apple juice. Bring to a boil.
  5. Reduce heat to low. In a small cheesecloth bag or spice sachet, combine 1 bay leaf, 6 whole allspice berries, and 2 whole cloves. Add the spice bag to the pot.
  6. Return the beef to the pot. Add 2 large carrots, peeled and chopped, and 2 medium apples (such as Honeycrisp or Braeburn), peeled, cored, and chopped.
  7. Cover and simmer for 1 1/2 - 2 hours, or until the beef is very tender.
  8. Remove the spice bag. If desired, thicken the stew with 1-2 tablespoons of cornstarch mixed with 2 tablespoons of cold water. Stir until desired consistency is reached.
  9. Season to taste with salt and pepper. Serve hot with crusty bread or mashed potatoes.
