How to Make Arizona Beans

  1. Cook 1/2 pound bacon until crispy. Remove bacon and crumble, reserving 2 tablespoons of bacon grease.
  2. Sauté 1 medium green bell pepper and 1 medium onion (chopped) in the reserved bacon grease until softened, about 5 minutes.
  3. In a large pot or Dutch oven, combine the cooked bacon, green pepper and onion mixture with 1 (15-ounce) can of pinto beans (drained and rinsed), 1 (15-ounce) can of kidney beans (drained and rinsed), 1 cup beef broth, 1/4 cup brown sugar, 2 tablespoons ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon chili powder, 1/2 teaspoon cumin, and salt and pepper to taste.
  4. Bring the mixture to a simmer, then reduce heat to 350°F (175°C) for 10 minutes, then lower to 250°F (120°C).
  5. Cover and simmer for 45 minutes, stirring occasionally, until the flavors have melded and the beans are tender. If the mixture gets too thick, add a little more broth.
  6. Serve hot or cold as a delicious side dish to your favorite ham and scalloped potato dinner!
